Inspired by the recipe from Nico de Soto

1 oz Aquavit
1 oz Oloroso sherry
3/4 oz ginger syrup
3/4 oz lime juice
Seltzer water
Fresh ginger for garnish

You can make ginger syrup by grating fresh ginger into some simple syrup and letting it sit for 30 minutes or so.

Fill a shaker with ice. Add all ingredients except the seltzer. Shake. Fill a Collins glass with ice, add a splash of seltzer and strain the mix into the glass. Garnish with a stick of fresh ginger and serve.
